My dad's tapioca desert.

 
Bahan-bahan:
Bahan A:
Ubi kayu.

Bahan B:
2 cawan santan.
3 biji telur.
1/2 keping manisan kelapa yang besar.
1 sudu gula.
2 helai daun pandan.
3 ulas bawang merah -dimayang.
1/2 inci halia -dimayang.
2 batang serai -dititik.
Garam secukup rasa.
 
Cara penyediaan:
1. Ubi kayu disagat (memanjang) dan dibentuk bulat-bulat. 
2. Alaskan alat pengukus dengan daun pisang.
3. Letakkan ubi yang telah disagat dan dibentuk bulat tadi di atasnya.
4. Kukus sehingga masak.Angkat dan ketepikan.
5. Santan dan telur dikacau dan dimasak di dalam periuk.
6. Masukkan manisan kelapa dan gula. Kacau sehingga hancur.
7. Masukkan bawang merah, halia, serai dan daun pandan.
8. Masukkan garam secukup rasa.
9. Kacau dan angkat. 
10. Hidangkan bersama dengan ubi yang telah direbus tadi.

Spices of life

Spices are widely used especially in the cuisines of the hot weather countries such as India, Africa, Indonesia, Thailand and Malaysia. They are sold either whole or ground. Whole spices will last longer than ground ones.

Storage:
-Store in tightly sealed jars in a dark, cool and dry place.
-Store red spices- (eg. cayenne, paprika and dried red pepper flakes) in the refrigerator to preserve their strength and colour.

Toasting whole spices:
1. Put them in a heavy-based frying pan and toast over low heat.
2. Shaking and stirring gently until they are fragrant. (Be careful not to burn them).
3. Transfer to a plate to cool before grinding.

Grinding spices:
1. Make sure the spices have been cooled down before grinding.
2. Use a pestle and mortar or a spice grinder to grind the spices.
3. Keep in a tightly sealed jar and labeled.
4. Store in a dark, cool and dry place.
 
Making a spice bag:
We can usually find a spice bag in shops or supermarkets. However, if you want to make it on your own,
1. Wrap the whole spices in a square of muslin.
2. Pull the edge together and tie with string.
3. Leave one end long enough to tie to the handle of a cooking utensils.
  
Benefits and Risks of spices: 
There have not been enough studies on spices to verify their benefits and risks.

PEPPER:
Peppercorns are available in black, white, green and pink

Black peppercorns (Piper nigrum) are the dried unripe berries. Piperine is an alkaloid found in black pepper.
White peppercorns are the dried ripened berries, with the outer casing removed. White pepper is less intense than black pepper. It is often used in cream sauces.
Green peppercorns are the unripe pepper berries which have a slightly acid taste. They used in cream sauces for steaks or with other rich meats. Green peppercorns decay quickly if not dried or preserved.
 
Pink peppercorns have a slightly sharp, acidic flavour and primarily used for decoration.

Benefits of pepper:
There have not been enough studies on peppers to verify their benefits or risks.

March 2010, few companies have voluntary recalled of products containing a pepper ingredient that may have the potential to be contaminated with Salmonella. 

Salmonella is a common food borne pathogen that can cause severe illnesses including fever, abdominal cramps and diarrhoea. While most individuals recover in 3 to 5 days without medical intervention, the infection can be life-threatening to young children, the elderly and those with compromised immune systems.

STAR ANISE:

Star anise  is a star-shaped fruit that is harvested just before ripening. Star anise (Illicium verum) is widely used in Asian cuisines.Star anise is an ingredient of the traditional five-spice powder in Chinese cooking.

News:
In 2003, The U.S Food and Drug Administration (FDA) issued an advisory warning against consuming "teas" brewed from star anise. The brewed "teas" containing star anise was believed to have been associated with illnesses affecting about 40 individuals, including approximately 15 infants. The illnesses, ranged from serious neurological effects, such as seizures to vomiting, jitteriness and rapid eye movement.

The Chinese star anise is considered safe. The Japanese star anise (Illicium anisatum), contains sikimitoxin and is highly toxic. One star anise has been dried and processed, it is not possible to visually distinguish between the Chinese and Japanese forms. Some teas may actually be Japanese or a mixture of the two type.

Cream Caramel with laici (Krim karamel berlaici)

Bahan-bahan:
Bahan A:
1/2 cawan gula

Bahan B:
4 sudu margerin
5 sudu gandum
3 sudu susu pekat

Bahan C:
8 biji telur
1/2 cawan gula
1 cawan air
sedikit esen vanila
 
Cara penyediaan:
1. Bahan A dibakar di atas dapur sehingga cair menjadi karamel. Angkat dan tuangkan di dalam bekas.
2. Pukul Bahan B.
3. Pukul Bahan C sehingga kembang.
4. Masukkan adunan B yang telah dipukul tadi ke dalam adunan Bahan C.
5. Kacau sehingga sebati.
6. Curahkan adunan ini ke atas karamel di dalam bekas tadi.
7. Kukus sehingga masak.
8. Angkat dan sejukkan.
9. Hiaskan di atas puding tadi dengan buah laici (Boleh juga digantikan dengan buah lain seperti pic).
10. Sejukkan di dalam peti sejuk. 
11. Sedia untuk dihidangkan.

An-Naas 1-6: Doa agar terlindung dari bisikan keburukan/kejahatan jin dan manusia.

"Aku berlindung kepada Tuhan Pencipta manusia, Penguasa manusia, Tuhan Yang disembah oleh manusia, dari keburukan bisikan (makhluk) yang tersembunyi, yang membisikkan (keburukan) dalam hati manusia, dari jenis jin dan manusia."

Al-Falaq 1-5: Doa agar terlindung dari kejahatan atau keburukan.

"Aku berlindung kepada Tuhan yang menguasai subuh dari keburukan makhlukNya dan dari keburukan malam ketika kelam; dan dari keburukan tukang-tukang sihir yang meniup sihir pada simpulan tali; dan dari keburukan orang yang dengki ketika mendengki."

Nuh 28: Doa agar diri, ibubapa dan orang mukmin diampuni Allah.

 
"Wahai Tuhanku, ampunilah daku, ibubapaku, orang mukmin yang masuk ke rumahku, 
 dan semua orang mukmin lelaki dan perempuan.

Al-Mumtahanah 5: Doa dijauhi dari sasaran fitnah.

 
"Wahai Tuhan kami, janganlah Engkau jadikan kami sasaran fitnah bagi orang-orang kafir, dan ampunilah kami, wahai Tuhan kami. Sesungguhnya Engkau Maha Perkasa lagi Maha Bijaksana."

At-Tahriim 11: Doa mohon dibinakan rumah di syurga serta diselamatkan daripada kaum yang zalim.

 
 "Wahai Tuhanku, binalah untukku disisiMu sebuah mahligai di dalam syurga."  
 "dan lepaskanlah aku daripada (kejahatan) kaum yang zalim."

At-Tahriim 8: Doa agar diberikan cahaya dan diampuni.

"Wahai Tuhan kami, sempurnakanlah bagi kami cahaya kami dan ampunilah kami; sesungguhnya Engkau di atas  segala sesuatu Maha Berkuasa."

Al-Hasyr 10: Doa agar diampuni dan agar tiada sifat kedengkian di dalam hati.

"Wahai Tuhan kami, ampunilah kami dan saudara-saudara kami yang telah beriman lebih dahulu daripada kami; dan janganlah Engkau jadikan kedengkian dalam hati kami terhadap orang-orang yang beriman; Wahai Tuhan kami, sesungguhnya Engkau Maha Penyantun lagi Maha Penyayang."

Al-Ahqaaf 15: Doa mohon menjadi orang yang bersyukur, beramal soleh dan agar keturunan menjadi baik.

"Wahai Tuhanku,  berikanlah taufik kepadaku untuk aku mensyukuri nikmatMu yang telah Engkau kurniakan kepadaku dan kepada ibubapaku; dan jadikanlah  aku orang  yang beramal soleh yang Engkau redhai; dan  perbaikilah bagiku pada zuriatku."

Al-Mukmin 27: Doa mohon perlindungan dari orang yang sombong yang tidak beriman.

"Sesungguhnya aku berlindung kepada Tuhanku dan Tuhan kamu sekalian dari setiap orang yang sombong  yang tidak beriman pada hari hisab (Kiamat)".

Al-Mukmin 9: Doa agar orang mukmin dihindarkan dari segala kejahatan (dosa).

"Hindarkanlah mereka (dari) segala kejahatan (dosa)."

Al-Mukmin 8: Doa agar orang soleh dan keluarganya dimasukkan ke dalam syurga `Adnin.

"Wahai Tuhan kami, masukkanlah mereka ke dalam syurga `Adnin yang telah Engkau janjikan kepada mereka dan orang-orang yang soleh dari ibubapa mereka, isteri-isteri mereka, dan anak cucu (keturunan) mereka semua. Sesungguhnya Engkaulah Yang Maha Perkasa lagi Maha Bijaksana."

Recipe: Kerabu Beko

Bahan-bahan:
Bahan A:
1 biji beko.
Garam.
Air.

Bahan B:
2 ekor ikan kembung.
6 ulas bawang merah.
2 ulas bawang putih.
1/2 sudu kecil lada hitam.

Bahan C:
1/2 biji kelapa diambil santannya.
Garam secukup rasa.

Bahan D:
2 sudu besar kerisik.
Limau nipis.

Cara penyediaan:
1. Beko (seperti gambar di atas) dibakar (sambil dibalik-balikkan kedua belahnya). Bila masak, kulitnya dibuang. Hiriskan isinya nipis-nipis. 
2. Gaulkan beko tersebut dengan air garam sekejap. Buangkan air garam tersebut dan celurkan dalam air panas. Angkat dan tapiskan beko tadi. Ketepikan.
3. Ikan kembung dibakar dan diambil isinya.
4. Tumbukkan bawang putih, bawang merah, lada hitam bersama isi ikan tersebut.
5. Sediakan kerisik (kelapa parut digoreng tanpa minyak dan ditumbuk).
6. Masakkan air santan bersama garam sehingga pekat.
7. Gaulkan beko tadi bersama adunan isi ikan, santan yang telah dimasak dan kerisik.
8. Perahkan sedikit air asam limau nipis. 
9. Hidangkan.

Al-Mukmin 7: Doa agar orang yang bertaubat diampuni Allah dan dipelihara dari azab neraka.

"Wahai Tuhan kami, rahmat dan ilmu Engkau meliputi segala sesuatu; maka berilah keampunan kepada orang-orang yang bertaubat dan mengikuti jalan Engkau; dan peliharalah mereka dari seksa neraka Jahim."

Asy-Shaaffaat 100: Doa agar dikurniakan anak cucu (keturunan) yang soleh.

"Wahai Tuhanku, kurniakanlah kepadaku (anak cucu) yang soleh."

Al-Ankabuut 30: Doa agar diselamatkan daripada kaum yang membuat kerosakan.

"Wahai Tuhanku, tolonglah daku terhadap kaum yang membuat kerosakan."

Al-Qashash 22: Doa diberikan hidayat ke jalan (arah) yang benar.

"Semoga Tuhanku memberikan hidayat kepadaku ke jalan (arah) yang benar."

Al-Qashash 21: Doa agar diselamatkan daripada kaum yang zalim.

"Wahai Tuhanku, selamatkanlah aku daripada kaum yang zalim."

An-Naml 19: Doa agar bersyukur kepada Allah dan menjadi orang soleh.

"Wahai Tuhanku, berikanlah taufik kepadaku untuk aku mensyukuri nikmatMu yang telah Engkau kurniakan kepadaku dan kepada ibubapaku; dan jadikanlah aku orang yang beramal soleh yang Engkau redhai; dan masukkanlah aku dengan rahmatMu ke dalam golongan hambaMu yang soleh."

Al-Qashash 16: Doa agar diampuni Allah.

"Wahai Tuhanku, sesungguhnya aku telah menzalimi diriku sendiri; oleh itu ampunilah aku".

Asy-Syu'araa 169: Doa agar diselamatkan dari amalan atau pengaruh buruk masyarakat.

"Wahai Tuhanku, selamatkanlah diriku dan keluargaku dari amalan (jahat) yang  mereka lakukan."

As-Syu'araa 118: Doa mohon kemenangan dan keselamatan diri serta orang-orang mukmin.

"Bukakanlah antaraku dan mereka kemenangan yang nyata; dan selamatkanlah daku dan orang-orang muslim yang bersamaku."

Asy-Syu'araa 87: Doa agar tidak dihinakan pada hari Kiamat.

"Jangan Engkau hinakan aku pada hari mereka (manusia) dibangkitkan (hari Kiamat)".
